Banana flambe french toast
- 50g dark brown sugar
- 1tsp cinnamon
- 50 ml spiced rum
- 2 thick slices of bread
- 1 firm banana
- 25g butter
- 2 eggs
First prepare the french toast, beat the eggs in a shallow bowl big enough to fit the bread in.
Dip the bread in the beaten egg and allow it to absorb the mixture.
Heat the butter in a frying pan and add the sliced banana.
Add the sugar and cinnamon and cook until the sugar has dissolved.
Now turn up the heat and add the rum, tilt the pan to the flame to ignite for the flambe effect.
In another pan fry the french toast until golden brown on both sides.
Finally pour the banana mixture on top of the french toast and dust with some icing sugar.
